An inspiring journey
After completing his high school diploma in technology and a BTS at Paul Augier High School in Nice, Florian Mercadier, a native of Nice, enriched his journey through various experiences: an internship in Chicago, Italy, and China, where he collaborated with Jean Montagard. Upon returning to France, he chose the French Riviera and honed his skills for three years alongside Jacques Maximin, first at La Table d'Amis restaurant in Vence, then at Parcours Live restaurant in Falicon. A new chapter in his adventure, he joined his parents in Saint-Martin where he became the executive chef at Anse Marcel Beach Resort, a gastronomic and eventful establishment with a private beach. After a decade in the Caribbean, even enduring the ordeal of Hurricane Irma, he returned to his native region to work as a private chef. With his wife, he finally realized his dream: to open his own restaurant, Maison Bellet.
Tasty Mediterranean cuisine by Chef Florian Mercadier
Florian aims to offer modern and authentic Mediterranean bistronomic cuisine, with classic "homemade" dishes such as confit veal ribs with gribiche sauce, Niçoise ravioli, estocaficada, pork shank, beef picanha, and on the seafood side: carpaccio, salmon, sea bass fillet... The menu also features appetizer platters for sharing.
The establishment consists of a first room with modern and cozy decoration, in shades of blue and orange. Comfortable and spaced seating offers a view of the open kitchen, where the chef's table stands. The second room, with its imposing bar, opens onto a huge furnished terrace with a panoramic view. The restaurant can accommodate up to 100 guests, indoors and on the terrace, and Florian and Caroline are supported by a team of 6 people in the kitchen and in the dining room.
Breathtaking views of the hills of Nice and the sea, a calm and relaxed atmosphere, a warm welcome
The inauguration was an opportunity for Florian to thank the guests, the elected officials, including Pascal Condomitti, deputy to the Mayor of Nice, the partners, the new team, the family, especially his father who came all the way from Saint-Martin for the event, and of course Caroline, his wife. This was followed by a lively evening, with the spirited rhythms of guitars, saxophones, and accordions.
