He later honed his skills at Mexico’s prestigious Colegio Superior de Gastronomía and worked in acclaimed kitchens worldwide. From French and Japanese techniques to Mediterranean freshness and Latin American vibrancy, Chef Walter has crafted a unique culinary philosophy called Cocina de Autor. This approach combines personal expression, global techniques, and inventive fusion, resulting in dishes that surprise and delight.
